After a little bit of a Christmas break, I decided to make a Southern classic. Pralines sounded like a really good idea. It appears as though I wasted $6 worth of pecans. Don't get me wrong; the taste was fine. My husband wanted to eat it over ice cream. He said they were gooey perfection. I think he's being nice to me, since I am carrying what will become his giant baby. I believe that I didn't cook the candy mixture long enough. What I made was pecan pie filling. Like I said, still good. I like a pecan pie; I just wasn't planning on pecan pie. Here is what I would recommend if you get a hankering for pralines. Go to the Praline Connection in New Orleans. Order the fried chicken and macaroni and cheese. Yes, that is the only thing I eat everywhere I go. Then, get the classic Bread Pudding with Praline Sauce, and then pick up some pralines in their store as you leave. These folks know what they are doing.
