Okay, Spam is not Southern. It's made in Minnesota, and Hawaii consumes the most Spam per capita. Why am I writing about it? It is one of the things my momma cooked while we were growing up. I have very fond memories. I never was a Vienna Sausage person (or Viennies as many folks refer to them) or potted meat fan (or pottish meat as a fellow I went to school with pronounced it). What was so great about my momma's Spam? She sliced it, slathered it in BBQ sauce, and then baked it at 350 degrees. There is nothing like a crispy barbecued Spam. We had tried it fried basically because we tried everything fried. I still do that. My husband had me try liverwurst, because he absolutely loves it and thought I should too. I took one bite and said that probably wouldn't be bad fried. Anyway, if you haven't tried barbecued Spam, please do. You will love it.
